Also, I made the King Arthur Flour chocolate and cinnamon babkas. it was a first time and wow, 2 sets of 2 hour proofs. It was OK? The chocolate one was demolished at the office.  The cinnamon one is below.  I thought they seemed dry though I cooked them only until just reaching an internal temperature of 195 F/91 C.

There are some super smart, savvy folks who are aggregating useful info about DW and how to make it a little more like Tumblr.  I saw the other day that  [personal profile] branchandroot had some things about mobility sites and I saw a g-doc go by on Twitter and then [personal profile] umadoshi  went and put together a handy set of tabs and links.  Also this super helpful comm from two people I've been following for awhile [community profile] fictional_fans 

In other news, my niece attempted to bake a cake over the weekend and I got frantic texts about 7 inch cakes pans (seriously, who has a 7 inch cake pan much less 2?) and her discovery that substituting coconut oil for butter will result in things tasting like coconut (SURPRISE) and that in fact that "sugar in the raw" is not substitutable for icing/confectioners sugar.  I'm trying to figure out a way to put together a baking box for her for Christmas without spending a fortune.  If you were advising a beginning baker who has NO equipment, what do you think she needs (forgive the American measurements)?

My essential list which is a list of some things to buy and some things I can give her
  • electronic scale in grams and ounces (this is the high ticket item but when you think about it, is cheaper than buying measuring spoons and cups and it's a really good discipline)
  • parchment paper
  • one cupcake pan (I have 4 and can give her one)
  • Rimless cookie sheet (I really don't want to part with one of my four but maybe I should... oh gawd no I can't)
  • 2 8 inch round pans
  • 1 8 inch square pan 
  • 1 13X9X2 pan ( have 4... maybe I can give her the older one that isn't too gross)
  • small loaf pan
  • handheld mixer (I have an extra)
  • Print outs of easy recipes with my handwritten notes on them.
I'd love to give her some basic spice ingredients, too, but getting good quality is expensive and I mean, I've got nielsen massey vanilla bean paste on my Xmas list).  I"m really torn about the pans.  You need good pans and I just don't like the idea of spending money on stuff that warps.  OTOH she doesn't need the higher quality stuff and buying all this can get expensive too.

I've got a number of quarter and half sheet pans I'd be happy to part with but I find I don't actually use them because their sizes are not super convenient for what I do and they have rims, so I don't use them for cookies and they aren't deep enough for cookie bars/brownies.

I thought about giving her baking book  -- Rose has a new baking basics book, but I think some personally culled recipes picked for their ease makes more sense.  She would need the book for how tos and understanding but I doubt she'd sit down and read a baking book the way I would and thsoe books can get SO emphatic.  (BTW, I did the apple walnut cake recipe that's provided for free.  It was super good and I've now managed caramel 3 times following Rose's recipes without so much as a burn.  I'm really happy about that)

CAPS WIN!!
My spousal unit is a long suffering sports fan and has been playing hockey all his life (and has the fake teeth to prove it) so this has been a FUN week in the greater DMV. Fun fact, the Stanley Cup is awarded to the players, not the owners so if you google images of players with stanley cup, you can see all the different ways that players have taken the cup home for a day of celebration. Swimming pools are very common -- evidently the cup floats.




I attempted a lemon elderflower cake in honor of Prince Harry and Megan Markle's wedding and it was not terrible!  I've now compensated by buying a lot of caster sugar and Rose Levy Beranbaum baking cookbooks!  But wow, cakes take a long time for me.  I was thrilled with the lemon curd -- much easier than I thought, and the ckae had a wonderful lift.  on the other hand, I tried King Arthur's self-rising flour and that was a miss.  I bought 5 pounds of White Lily self-rising flour and shall again try shortcakes and biscuits and I"ve got some raspberry puffs in the freezer that I suspect will be greasy pucks when baked.  Baking takes a lot of practice for me.  stupid DW won't let me put a pick in but you can see it here,  EDIT TO ADD PICTURE





I had a lovely, long chat with [personal profile] buttonloops after too long and it was awesome.
Writing is still deathly slow but I think this weekend will be a good time.  I don't have any guilt-inducing work deadlines -- which have been punishing.  Maybe something by Sunday.  Here's hoping.  I keep getting distracted by the possibiity of writing porn -- which isn't something I've done in a long, long time and really I'm not sure about flexing those particular muscles again.

I saw Solo, twice, once with Knitress and Econopodder and then saw it again with spousal unit and spawn.  I'm always glad for new SW content but I was really not a fan of Solo.  I felt it was more derivative than any of the other new films (the whole maw sequence was done far, far better in the first Trek reboot), I came away actually liking Han and Chewie less, I felt it undermined an iconic moment of Leia's (thermal detonator in Jabba's Palace), I don't give a damn about Tobias Beckett (YAWN), I was super disturbed by what happened to L3 and was pissed that Val wasn't in Beckett's place.  But, whatever.  I always like new content and I'm not going to get in a twist about it.  AND, I"m off to Origins Con in Columbus next weekend to hang out with Club Jaders (will you be there?!  Let me know!) AND bought a Celebration ticket (FIRST TIME, CAN YOU BELIEVE IT?) AND I HAVE 2 HOTEL ROOMS.

So, to begin, I'd like to share the King Arthur Flour Banana Bread generator, where you can adjust the fats, flours, sugars, fiber and add ins. I thought it was pretty darn cool. I made my usual loaf of quick orange bread last night, which was fine, but in my eagerness to watch the Timeless finale live (OMG RUFUS and Indiana Wyatt Jones and Lucy Laura Croft WHUT?) I managed to omit the baking powder, resulting in lovely tasting brick of lemon poppyseed quick bread.

I fetched the spawn from college over the weekend and got all Mom when ordering his friends about in their own packing and moving out. I got positively twitchy watching one of them incorrectly pack up his minivan. And, I assume this is like all college students, where you send them out with stuff that they promptly forget they had and so they keep buying it. Spawn did say that the isopropyl alcohol I sent with him came in handy when his roommate got drunk (a frequent occurrence) and decided, with his Lacrosse teammates) to give himself a body piercing.

VERY SAD ABOUT THE EXPANSE BEING CANCELLED. GAWD I HOPE IT FINDS A HOME.  And

We went to Mother's Day events at the local Franciscan Monastery for a garden party. This is from the monastery when we took the dogs for the blessing of the animals.  My spousal unit was working to become a lay Franciscsan about 10 years ago (hence why I had so much stuff around the house about Duns Scotus, etc.)  Franciscans are very chatty and they all headed straight for the wine.  We were supposed to wait for the blessing of the food but since all the monks (or brothers?) were loading up their plates at the buffet and going for refills, we didn't wait.    Retired DC Cardinal Ted McCarrick was there and had, no lie, a GIANT stein of beer.  (He's 88).  The beer was amber and frothy and looked very good.  It was hilarious.  I might still be Catholic if he was still Cardinal.




And yeah, I know, it's a day that sucks for lots of people.  I did enjoy going to the grocery store and experienced the full spectrum of the day -- married Indian celebrating the day with his wife, single mom battling cancer, deli clerk missing her own mother who died 3 years ago, and others who don't give a damn, for whom I said simply, I hope everyone is kind to you today. 


And I thought I'd managed to fix the Borked images on Food for Thought but nope, so gotta go back and figure that out.  Ugh.  this used to be so easy with Photobucket.  I really can't figure out the new DW picture loading.  It's terrible and though I've never been good with html I didn't think I was that bad.  It shouldn't be that hard to embed pictures, right?  How are you doing it so easily and seamlessly.  [personal profile] generalleia  I'm looking at you.

I have a whole 800 words in the next chapter of the Star Husband.  Woot.  GO PATHETIC ME -- Peter, Mary, Lucy, and Asim are on their way to Joggins to visit Rita and Lucy is in a tailspin with a bad case of the depression bears.

So my SO, dear, darling long suffering person, LST, has FOR YEARS, wanted to invite his co-workers over for St. Patrick's Day or Cinco de Mayo, or something.  Always.  I sort of nod, and say, OK, fine, whatever, sure.

So, it's finally happening, on Sunday, and he got really short with me when he asked about food ideas and I responded that there really weren't any typically Irish foods we could serve for a crowd unless we looked at a pork or lamb dish, or salmon, and/or potatoes.  And this is more a 4-7 PM buffet kind of grazing thing, not a sit down meal.  He said he didn't think lamb (I agree), he likes salmon but not for a party food for 20, and there are Indian and Jewish guests coming, so pork is out. 

Fine.  Party poultry it is, with a vegetarian option.  I said I'd make turkey chili and vegetable chili -- not Irish but good, easy and he likes it and I'll do something with potatoes -- I'm thinking hash brown cups.
I made a bunch of batches of cookie dough, froze them and can bake cookies, crackers and cheese, get a fruit and veggie tray, make some mac and cheese for the kids (yes, we have kids too) and we're done, right? 

I send him out to get decorations and he buys Irish beer, so he's happy, and when he asked about things for the kids, I said, well, we can have them decorate cookies or cupcakes with green sprinkles and frosting. 

HA HA HA

Now, I do have a very high food awareness, allergens, sensitivities and such.  I can accommodate just about anything. My BIL is allergic to melon and fish.  My SIL is allergic to shellfish.  I've entertained lots of people with nut, shellfish, gluten allergies, and lactose sensitivities.   I don't have them but gosh I know lots of people who do and it's bad form to injure your guests.  I know how to cook in a clean, segregated kitchen.  I'm glad to do it.  So I always ask, any allergies?  Anything out?

2 no nuts, eggs (including any cooked eggs, like in baked goods)

Wuhhh.  THAT becomes a very small set of foods that can be eaten by everyone.  Beans, vegetables, fruit, preferably raw.   Because seriously if you eliminate all animal products (fine, that's doable), you typically start substituting nut butters, flours, and milk substitutes.  But, nuts are out.  Gluten free is no problem (OK, no pasta or bread, but this is what those rice crackers are for) but a lot of gluten free flours specifically state for baking, don't substitute the eggs.  Macaroons are good alternative but those have nuts and egg whites.  Also, not putting the corn I already bought in the vegetarian chili and the vegetable and chicken stock I bought say they are gluten free -- but I may have to make my own stock between now and Sunday to be sure. 

I've not told my husband that the gluten-free person won't be drinking any of the beer he bought. 

WHOLE FOODS HERE I COME.    And chocolate dipped fruit except I don't have that fondue sterno thing.  Also, I found this, speaking of beans, deep dish cookie.

Gah.  I knew this would happen.
