So with the stuffings -- or is it dressing? What are the differences? People can get very religious about stuffing and in theory there are lots of regional differences though I've never actually experience it, other than the New England habit of oyster stuffing. I've lived all over the US at this point and it's all basically variations on dried bread, herbs, celery, onion, apple, and maybe dried fruit, sausage, or giblets. My cookbooks always tell me you will find rice dressing in the South, cornbread in the southwest, etc. etc.
